24 cm or 8 cm Tart Mold x8.
Flour 200g
Butter 100g
Salt 1g
Sugar 25g
Water 50g
Egg Yolk 15g
Instructions
1. Cut the cold butter into small pieces and add to the flour.
2. Rub it into the sand with your fingertips.
3. Add water, salt, sugar, and egg yolk and mix with your fingertips.
4. Knead the dough twice with the palm of your hand to make sure that the dough is kneaded evenly and that no butter left.
5. Spread the dough flat and wrap it in plastic wrap for at least 2 hours in the refrigerator. It is better for overnight.
Tips:
Pay attention to the dough. Do not over-knead the dough to avoid developing gluten.
