Sweet Tart Crust 2018-10-16

Sweet tart crust is similar to sablée tart crust but it is not fragile like sablée tart crust. It is suitable for lemon tart bottom and mousse cake bottom.

 

Preparation

A 24-30 cm or 8 cm tart mold x8.

Ingredients

Flour 250g

Almond powder 25g

butter 140g

Sugar powder 100g

Whole egg 50g (one egg)

Salt 1g

 

Application

 1. Stir the butter and sugar powder with until it is creamy.

 2. Add eggs and salt.

 3. Add flour and almond powder and mix with a spatula.

 4. Press and knead the dough 1-2 times. Flatten the dough, wrap it in plastic wrap, and let it rest in the refrigerator for at least 1 hour. It is better for overnight.

 

Tips

Mix tart and spreads the tart evenly.
